Boy, I haven’t been very good at that whole ‘sharing 2 recipes a month’ goal, have I? I think I’ve only done one so far. Well, here’s another one for you! Only 4 more to go to be caught up :)
Chocolate Cherry Green Monster
1 cup frozen unsweetened cherries
1 large handful of spinach
1/3 cup Greek yogurt (the high protein stuff)
1 tbsp raw hemp hearts
1 tbsp chia seeds
1 tbsp cocoa powder
1 scoop vanilla protein powder (I used Body by Vi protein – 90 calories and 12g of protein)
1 cup milk of your choice (I used 2%)
Place all ingredients in a blender, blend and enjoy.
If your like me and rarely get a chance to have a snack between breakfast and lunch (or sleep until 11 on the weekends), then this will serve 1. If you are a snacker, or just like to share, this can easily serve 2.
This is an attempt to get back on track with my eating and exercise, and I am very happy to say that it was quite delicious. Who says healthy food tastes bad?
In an effort to stick to some more of the goals I set for myself, I am signing up for a 5K with my mom this week. It will likely be a few months away so we can train for it, and hopefully I’ll go on to a 10K after that.
As we are in the third month of the year, I decided to revisit the goals I made in January. Honestly? I’m not doing great at keeping up with most of them, so that is what I am going to focus on in the coming weeks. Especially the health related goals. If you set yourself some goals for this year, how have you been doing? Are you finding them easy to stick to, or are you struggling?
