The Best Almond Butter EVER!

I say that without a hint of sarcasm. I am about to share with the world the GREATEST ALMOND BUTTER RECIPE EVER! You excited yet? Good, let’s to it! First, there’s a few things worth sharing.

I feel sort of bad for not blogging much this week, but I didn’t want to regale you guys with ‘Tales of Boredom and Monotony’ by LaraG. My week was essentially this: Bummed because I couldn’t run or workout, stressed at work despite the short week, and finally, starting the countdown to summer holidays. As far as the working out goes, my knee and ankle were bothering me a bit, so I decided to take the week off instead of giving myself a full blown injury. My knee feels good now, my ankle still feels weird. I will be working out no matter what tomorrow. It is a sad fact that I can’t go very long without moving my body before my clothes start to get tight, as I discovered this morning. I am dangerously close to a muffin top, and that shiz ain’t happenin’.

Work is… work. I love the kids, it’s other factors that are bothering me. I’m not really going to go into it because I would rather stay positive. I will leave it at that. This summer break countdown could be the earliest one for me yet, but I guess it’s not surprising when I have an actual vacation to look forward to. I just have to get my passport in order then I’m good to go.

Before making the almond butter today, Shane decided to let the kitties hang out in the yard for a bit. This makes me sort of nervous because there was a mentalist who was mutilating cats in my neighborhood last year, so our furry children are strictly of the indoor variety. Outdoors is a once in a while treat, sort of like chocolate for kitties. Dewey loves it outside, but Ponti had never been out until today. I think we created a monster. I’m sure we’ll have tons of trouble with this now, but on the plus side, it did result in some amazingly cute Ponti pics! He reminds me of a little kid staring desperately through a candy shop window.

‘Princess’ Dewey wouldn’t allow me to take her picture, so I finally grabbed her and got Shane to snap some pics. As you can see, she was not that impressed.

I finally finished annoying the kitties long enough to get the almond butter made. Let me tell you, it is DEEE-LISH! I made a batch a few weeks ago around the same time Shane was having a nerd party, and I invited some friends to try it. One of the friends doesn’t even like nut butter, but his wife made him try it. He loved it.

You know it’s good when someone who doesn’t traditionally like the stuff falls ‘in like’ with it 😉

The whole reason I started experimenting with nut butters is because I have always wanted to try those specialty varieties, but could never justify the cost. After some browsing on the blog Oh She Glows, I came across a recipe for chocolate almond butter. I tried it, and was hooked. After a while, I wanted something new, so I thought of a few combinations, and this is what I came up with in the end.

Maple Coconut Almond Butter


2 C Raw Almonds
1 C Shredded Unsweetened Coconut
1 Tbsp Coconut Oil, melted
3 Tbsp Maple Syrup
1 tsp Real Vanilla Extract
1 tsp Ground Cinnamon
Pinch of Sea Salt

Preheat oven to 350 degrees. Place almonds and coconut in a large mixing bowl. In a small bowl, mix the oil, vanilla and maple syrup together, then add to the almonds and coconut. Stir until coated and then place on a parchment lined baking sheet. Roast in the oven for 15-20 minutes, stirring every 5 minutes to ensure the nuts don’t burn.

When the nuts are roasted, remove from oven and let cool for about 5 minutes. Place roasted nuts with the cinnamon and salt in a food processor and let ‘er rip! It will take between 5-10 minutes to get to the butter stage.

Once the butter is processed, place in a clean jar. It will be slightly runny, but will thicken as it cools down. I have no idea how long it will keep for because it doesn’t ever last longer than a week in our house. I like my nut butters with apple.

Truth be told, I was never huge on nut butters until I started making my own. There is just something so awesomely impressive about doing this, when in reality, it is one of the easiest things to make in the world. I’m sure if you tried this recipe, you’d stop buying the commercial stuff too.
