Day 8. And a recipe.


I would have to say that day 8 has been the least successful so far. Remember that Tin Man type soreness I was talking about a few days ago? It’s still here, and doesn’t seem to want to go away. I finally bit the bullet and got myself a foam roller. Talk about agony and bliss all at once! I actually yelped when I was rolling my quads, but after it was done, I seemed to be able to move a little bit easier.

None the less, I decided while at the running store that I probably wasn’t going to be working out today, I am learning to listen to my body. I did manage a walk after dinner, but I had to so it on the treadmill because the weather has been crappy all day. The nice thing about the treadmill is that I can get reacquainted with some of my favorite shows. Tonight was Misfits, my all time favorite show. It’s about a group of young offenders that get super powers from a storm. The premise sounds terrible, but the show is great. Here is a clip for you to watch. Just a warning though, many of the jokes in this show are really inappropriate and might not be for everyone.

It really is a wonderful show with great acting and awesome stories. It’s ‘Hero’s’ done right.

On the eating front, not great, but not the worst either. I was feeling a bit nauseated in the running store so I ended up downing a package of Clif Shot Bloks. Not the best choice, as it is a packaged food, but I could pronounce all the ingredients so I figured it was as good as it was going to get. The good thing is that it worked, my stomach was settled, it just wasn’t part of my plan. Oh well, no big deal, the rest of the day has been clean.

My plan tomorrow will include clean eating, a run/walk, and P90X chest and back. For sure this time. Oh, I did manage a run last night and it went really well! It felt so good to be running again! I did a 5 minute warm up at 4mph and then alternated between 7mph and 4mph for 90 second intervals for about 25 minutes.

On to the recipe. I seriously LOVE this cream sauce, I made it again tonight and it was just as good as the first and second time. I made this recipe entirely in my vitamix, so if you don’t have one, follow this recipe instead and modify as you want.

Vegan ‘Cream’ Pasta

12 oz Pasta of your choice (I have used brown rice pasta and spelt pasta, both tasty)
1 C Raw cashews
1/2 C Water
1/2 C Red wine OR vermouth
2 Large tomatoes, quartered
2 TBSP Tomato paste
4 Cloves of garlic
2 Portabello Mushrooms, roughly chopped
1 tsp both basil and oregano
Salt and pepper to taste

Cook pasta according to package directions. Add all ingredients except mushrooms and spices to the vitamix and turn on blender to setting 4, then to high speed. Allow blender to run for about 6 minutes, or until steam rises from the lid. Add chopped mushrooms and spices, and turn the blender back on to setting 4, allowing all ingredients to be incorporated. Pour sauce over cooked pasta and serve. Makes 4 servings, with extra sauce.

I found that I had a lot of sauce, so I packed some of it up to use another time. As far as the wine goes, I found the red wine gave the sauce a more robust flavor while the vermouth made the sauce more delicate tasting. Either way, it was very good.
